Pollock is a greenish-brown spotted fish with a white belly and sides that is typically packaged in sizes between one and four pounds. This particular fish has always been a standard choice for tender, flaky whitefish. It is mainly used in value-added products such as fillets and breaded fish sticks. It can also be found in artificial crab meat, which is very common in Japan as a cheap substitute for real crab. Originally sold as a cheaper alternative to haddock and cod, this hardy fish enjoys established demand and is the most widely consumed whitefish in the world. There are two main species: the Pacific or Alaskan cod and the species found on the west coast. The majority of frozen pollock sold in Britain now comes from Alaska and the Pacific. Burnt coalfish is washed and the scales and gills are removed. Then each head, tail, fins and bones are separated and then used by an automatic filling machine. In the packing station, the tapes are frozen and placed in trays, after which the frozen tapes are delivered to customers in product blocks. Frozen bread blocks produce bread and fish dips, fish cakes and fish sticks.

While some pollock fish are treated individually quickly with gray fillets and layered fish sticks, allowing the lines to be used individually for the fish, the pollock is brought back to its original dimensions and classified according to the type of consumption. Under optimal conditions and at a temperature of 18°C, frozen markers, stored in the original packaging, can remain intact for 18 months.
